OUR STORY

Built on smoke,
faith & possibility.

Sometimes the best things in life don’t begin with a perfect plan. Sometimes they begin when life doesn’t go according to plan at all.

PITMASTER • BIG LITCH BBQ

This BBQ journey is still in its very first stages. We don’t have everything figured out yet, and we’re not pretending that we do. What we do have is a smoker, a passion for good Texas-style BBQ, a willingness to work hard, and a belief that anything is possible when you’re willing to keep going.

For me, this business means much more than cooking brisket, ribs, pulled pork, and turkey. It’s about taking a difficult chapter of my life and trying to turn it into the beginning of something meaningful.

THE ROAD HERE

I’ve spent my life living with a rare genetic condition called Proteus syndrome. It has made my journey different from most people’s and has taught me from an early age that life doesn’t always hand you the easiest road. There have been obstacles, setbacks, and plenty of moments when I’ve had to find a way forward even when I wasn’t sure what that way looked like.

Recently, life handed me another one of those moments when I lost my job. I found myself at what felt like rock bottom, wondering what came next.

But sometimes rock bottom gives you a pretty solid place to start building.

So instead of allowing that chapter to be the end of my story, I decided to bet on something I love.

BBQ.

TRUST THE PROCESS

There’s something special about barbecue. You can’t rush it. You have to give it time, patience, attention, and a whole lot of love. You start with something simple, put in the work, and trust the process. Hours later, you can end up with something incredible.

In a way, that’s exactly what I’m trying to do with my life.

I’m starting small. I’m learning. I’m improving with every cook. Things may not always be perfect, but every rack of ribs, brisket, turkey, and tray of pulled pork that comes off my smoker represents another step toward building something I can be proud of.

My goal is simple: bring people good, honest Texas BBQ made with care.

MORE THAN A MEAL

I want this to become the kind of BBQ people look forward to sharing with their families, bringing to a get-together, serving at a celebration, or ordering just because they want something good to eat. Food has a way of bringing people together, and being able to create those moments for someone else means more to me than I can put into words.

And when you order from me, you’re supporting more than a meal.

You’re supporting a woman trying to rebuild her life. You’re supporting a dream that’s being built one smoke, one rack, one brisket, and one customer at a time. You’re helping prove that where you start—or how many times life knocks you down—doesn’t have to determine where you finish.

We’re just getting started, and I don’t know exactly how far this journey will take us. But that’s part of the beauty of it.

Because around here, we’re built on the idea that anything is possible.

Thank you for being here at the beginning—and for giving me the opportunity to put a little Texas smoke on your table.

GOOD SMOKE. GOOD PEOPLE. GOOD TIMES.
